POKOTABI / Shuan Kanau
酒庵叶う
At Shuan Kanau in Shinozaki, Edogawa Ward, Tokyo, enjoy Niigata-style tare katsu dipped in a seasoned soy-based sauce, katsu rice boxes, fresh sashimi, and simmered black cod alongside Niigata sake.
01 / ABOUT THE PLACE
Unlike classic katsudon bound with egg, Niigata tare katsu features thinly breaded cutlets dipped in a rich, sweet-savory soy glaze and laid across steamed rice. At Shuan Kanau in Shinozaki, the owner draws on the culinary traditions of his native Niigata to craft his signature Niigata katsu jyu. The seasoned dipping sauce, continuously replenished over time, soaks lightly into the coating, preserving a light, crisp crunch while highlighting the natural flavor of the meat. Substantial lacquered rice boxes such as pork katsu jyu and chicken katsu jyu provide a hearty meal, while pork fillet or chicken tenderloin cutlets can also be ordered individually by the piece (2 slice) as an accompaniment to drinks.
Alongside the specialty cutlets, seafood personally selected at the market by the owner forms the other centerpiece of the menu. Offerings include a standard three-variety sashimi platter, changing daily catches, and simmered black cod (gindara no nitsuke)—a year-round fixture known for tender, flaky flesh infused with a well-balanced braising liquid. The kitchen also prepares handmade simmered dishes such as Wagyu beef tendon with red miso tofu and pork jowl simmered with daikon radish, alongside small seasonal vegetable plates.
To accompany the meal, the drink list highlights regional sake from Niigata Prefecture, Sapporo Akaboshi bottled beer, shochu, and highballs. Counter and table seating accommodate those stopping by alone after work for a casual drink, as well as friends and families gathering for dinner.
